Koldklimavine fra Casablanca dalen I Chile
Vingården ligger 80 km nord for hovedstaden Santiago i det maleriske Casablanca Valley, der er kendt for at være Chiles bedste distrikt til koldklimavine på grund af beliggenheden tæt på Stillehavet.

50% of the vines are planted on clay of granitic origin. The other 50%
are planted in very stony alluvial soil.


100% of the clusters were hand-harvested on 24 April.
The 2014 season was marked by cool temperatures in the Leyda
Valley and the absence of rain throughout the entire ripening period.
These conditions allowed the grapes to ripen slowly, developing
good aromatic intensity and producing impeccably healthy fruit.

Fermentation Prior to fermentation, the must underwent a cold maceration for a period of close to 7 days. Once the alcoholic fermentation was underway, gentle extraction took place at moderate temperatures of
between 26°C and 28°C.

100% of this wine was aged in French oak barrels from Burgundy for a period of 10 months. 15% of the barrels were new; 25% were second use and 60% were third or fourth use.

This wine can be stored for up to 5 years in optimum conditions.

Palate
Color Deep violet red.
This wine has great character and personality. It reveals notes of wild
Chilean black berries, such as maqui and murtilla, complemented by
gentle hints of healing herbs like pennyroyal, lavender and thyme.
In the mouth, this wine is medium-bodied with crisp acidity and great
freshness. It has round, firm tannins that underpin a gentle, elegant
background of French oak intermingled with spices and wild fruit.
Serving suggestion


Best served at a temperature of between 16°C and 17°C, this wine
pairs well with pork, lamb and risotto, as well as cheese and pasta.
